Spiced Almond Rum Nightcap

I love to chill out in the evenings with a good movie, a blazing fire and a piping hot drink, especially when it is freezing cold outside and it leaves you feeling a bit miserable. Years ago my Mum would make us all hot milk for the chilly evenings and well, this spiced almond rum recipe is the adult version…kinda.

The last thing you want, however, is to come home from a busy day and spend ages on making something complicated, particularly when you’re trying to wind down. Luckily this drink couldn’t be any quicker or simpler. All it takes is a few minutes of your time, a saucepan, almond milk and a handful of ingredients that you probably already have in kitchen cupboards.

You can leave the rum out if you want or replace it with a drop of whiskey or brandy.

Ingredients
  1. 2 cups of unsweetened almond milk
  2. 1/2 tsp of vanilla extract
  3. pinch of mixed spice
  4. pinch of cayenne pepper
  5. 2 tsp of maple syrup
  6. a splash of rum
Instructions
  1. Pour 2 cups of almond milk into a saucepan and put on medium heat. Add the rest of the ingredients and give it a stir. When the milk begins to bubble, take it off the stove and pour into your cup. As simple as that! Sweet dreams..
