Quick and Tasty Raspberry Sorbet
The weather has been unusually warm here for this time of year. Everywhere I turned today I’ve seen people eating ice creams and sorbets. Workmen, school kids and women rushing about in their cars. So it must have been subconsciously in my mind when I looked into the freezer and saw a box of raspberries and wondered ‘what can I do with these tonight?’
I loved how this turned out – sweet and refreshing. Very simple and no need for an ice cream maker! If you aren’t serving these straight away, you can pop them in the freezer.

- 250g frozen raspberries
- 250g greek yogurt (or coconut for a vegan option).
- 1 teaspoon honey (or maple syrup).
- Coconut flakes
- Place the frozen raspberries, yogurt and honey into a blender and whizz for about 30 seconds.
- Serve in a glass or a bowl and put whatever toppings you wish. On this occasion I used coconut flakes.
