Raw Coconut and Blueberry Macaroons

I wanted to make a quick guilt free treat and raw macaroons kept coming into my head. This was just a little experiment that turned out to be rather good. I only wish I had made enough for a bigger batch!  These are incredible quick and easy to make, that’s what I love about raw foods. So without further ado, here’s the recipe.



Raw coconut and blueberry macaroons

What you need:

  • 1 cup of organic shredded coconut (make it 2 cups for a bigger batch)
  • 1 cup of fresh blueberries
  • 1 tsp organic honey (or maple syrup)
  • 1 tsp of almond butter (you could also use coconut oil instead)
  • 1/2 tsp vanilla extract
  • pinch of sea salt


Begin by placing the blueberries into a food processor. 
Blend until liquid. 
Add the rest of the ingredients.
Pulse until combined. 
Shape the mixture into small balls (I used a tablespoon)
Store in the freezer for 3-4 hours before serving.
